Roast Po-Boys in a Packet

Ingredients

Butter-Mustard Sauce:
1 stick butter
2 tablespoons sugar
3 tablespoons mustard
2 tablespoons poppyseed
2 tablespoons grated onion

Po-Boys:
1 (1- to 1 1/2-pound) pork tenderloin
1/2 cup water
1 teaspoon Cajun seasoning
1 long loaf French bread
1 pound Swiss or provolone cheese

Directions:

Butter-Mustard Sauce:
Melt butter in small pot; stir in remaining ingredients.

Po-Boys:
Cook pork tenderloin in pressure cooker for 12 minutes at 7.5 pounds pressure with water and seasoning.

Preheat oven to 325°. Split bread loaf horizontally; paint both halves with Butter-Mustard sauce. Layer cheese slices, then roast slices on top. Cut into desired number of po-boys (4–6). Wrap each section in foil and bake 14 minutes. Keep wrapped till ready to serve. offer lettuce, sliced tomatoes, and pickles.

Editor’s Extra:
Roast the pork loin 40–50 minutes at 350°, if desired.
