Trudy’s Cherry Coffee Cake

1 egg, beaten
1/4 cup milk
1/2 cup sugar
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1 3/4 cups biscuit mix, divided
1 (21-ounce) can cherry pie filling, partially drained
1/2 cup brown sugar, packed
1/2 teaspoon cinnamon
3 tablespoons butter, diced
1/3 cup chopped walnuts


Combine egg, milk, sugar, salt, vanilla and 1-1/2 cups baking mix. Stir until smooth. Pour mixture into a lightly greased 8"x8" baking pan. Spoon pie filling over mixture in pan. Mix together remaining baking mix, brown sugar, cinnamon, butter and nuts. Sprinkle over pie filling. Bake at 375 degrees for 30 minutes. Cut into squares.
