Sweet-and-Sour Turnips

5 to 6 turnips, peeled and sliced 1/4-inch thick
salt to taste
1 egg, beaten
1/2 cup vinegar
1 cup sugar
1 tablespoon all-purpose flour


Cover turnips with water in a large kettle; add salt as desired. Boil over medium-high heat until soft. Drain turnips thoroughly and return to kettle. Mix together egg, vinegar, sugar and flour until well blended. Add mixture to turnips and bring to a boil, stirring continuously to prevent scorching. Boil for approximately one minute; mixture will thicken slightly.
