Harriet’s Potato Pancakes

Serves: 6

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs, beaten
1 cup milk
2 tablespoons onions, grated
1/4 cup butter, melted
3 cups potatoes, peeled and finely grated
Additional butter for frying


In a small bowl, mix together flour, baking powder and salt, if using; set aside. Combine remaining ingredients, except butter for frying, together in a medium bowl. Stir flour mixture into potato mixture until well blended. Drop by tablespoonfuls onto a buttered frying pan or griddle. Cook on both sides until golden.
