Good-for-You Southern Greens

1/2 cup cooked ham, finely chopped
1/2 cup onion, finely chopped
1 bunch kale, trimmed
1/2 cup chicken broth
1/8 teaspoon salt
1/8 teaspoon pepper
red wine vinegar


In a large skillet over medium heat, cook ham until slightly browned. Add remaining ingredients except vinegar. Cover; simmer for 15 minutes, or until kale turns soft and dark. Drizzle with vinegar to taste.
