Garden-Fresh Green Beans

4 to 6 slices smoked bacon, diced
2 pounds green beans, trimmed
1 onion, diced
1 green pepper, diced
1 tomato, diced
salt and pepper to taste


In a large heavy skillet over medium heat, cook bacon until crisp. Set aside bacon, reserving drippings in skillet. Add remaining ingredients to skillet. Cover tightly and reduce heat; cook for 10 minutes. Add just enough water to cover bottom of skillet; increase heat and cook until beans are tender. Stir in cooked bacon.
