Bacon & Onion Mashed Potatoes

Serves: 4

4 potatoes, peeled and quartered
3 slices bacon, chopped
2 cups green onions, green tops only, sliced


Cover potatoes with water in a medium saucepan; boil until tender. When potatoes are cooked, drain, leaving potatoes in pan. Place pan back over low heat, shaking slightly to allow potatoes to dry. Remove from heat again; mash potatoes and set aside. Fry bacon in a skillet until crisp. Turn heat down to low; do not drain. Add onions, stirring to coat all. Add potatoes, mashing to blend in bacon, drippings and onions.
