Turtle Pecan Cheesecake

2 cups cookies crumbs
1/4 cup butter, softened
2 1/2 (8-ounce) packages cream cheese, softened
1 cup sugar
1 1/2 tablespoons flour
1 teaspoon vanilla extract
1/4 teaspoon salt
3 eggs
2 tablespoons whipping cream
1 cup chopped, toasted pecans
Caramel Topping:
1/2 (14-ounce) package caramels, unwrapped
1/3 cup whipping cream
Chocolate Topping:
4 (1-ounce) squares German chocolate, chopped
1 teaspoon butter
2 tablespoons whipping cream


Combine cookie crumbs and butter; press onto bottom of a 9-inch springform pan. Beat cream cheese until creamy. Add sugar, flour, vanilla, and salt; mix well. Add eggs, beating well. Blend in cream. Pour over crust. Bake in a preheated 450° oven 10 minutes; reduce temperature to 200°. Continue baking 35–40 minutes or until set. Loosen sides. Cool completely. Drizzle with 1/2 Caramel Topping, 1/2 Chocolate Topping, pecans, remaining 1/2 Caramel Topping, and remaining Chocolate Topping. Store in refrigerator.

Fun Fact: Five of the seven species of sea turtles existing in the world today—all on the endangered species list—can be found in North Carolina’s coastal waters. The most commonly seen turtle is the loggerhead, which nests on the state’s beaches from May through August.
