Bruschetta With Chopped Tomatoes, Parsley, And Basil

This classic Italian favorite is best when all the ingredients are fresh. Try to find the best bread available, and don't skimp on the tomatoes since they are the crucial ingredient. I suggest cherry tomatoes here as they often have more flavor, but feel free to substitute other flavorful vine-ripened tomatoes.

   4 cloves garlic, 2 minced and 2 whole
   3 cups cherry tomatoes, chopped
   1/4 cup olive oil
   2 tablespoons coarsely chopped fresh flat-leaf parsley
   1/4 cup coarsely chopped fresh basil
   1/2 teaspoon sea salt
   1 tablespoon capers, minced
   1 loaf ciabatta bread, cut into thick slices

Preheat the oven to 400°F.

In a medium bowl, combine the minced garlic, tomatoes, olive oil, parsley, basil, salt, and capers. Mash the ingredients together.

Place the bread on a baking sheet and toast for 5 minutes on each side, or until golden.

Rub the toasts with the whole garlic cloves. Cut the toasts in half. Spread 1 tablespoonful of the mixture on each garlic toast.

Put the toasts on a decorative platter and serve.
