Yam And Apple Medley

Ingredients

2 (17-ounce) cans yams whole, drained and cut in 3/4 -inch slices
2 apples medium Golden Delicious peeled, cored and cut in 1/4 -inch slices
1/4 cup raisins
1 cup apple juice
1/2 cup brown sugar packed
1 tablespoon cornstarch
1/4 teaspoon allspice ground
1/4 teaspoon cinnamon ground
2 tablespoons butter or margarine

Directions:

At least 1 hour or up to 6 hours before serving:

Grease a 1 1/2 -quart shallow baking dish. In baking dish, layer half of the yams, all of the apples, remaining yams and raisins set aside.

In a small saucepan, stir apple juice, brown sugar, cornstarch, allspice and cinnamon until mixture is smooth. Add butter or margarine. Stirring over medium heat, bring to a boil and boil for 2 minutes or until thickened. Pour over yam mixture. Lightly grease foil and tightly cover dish, greased-side down. If making ahead, refrigerate up to 5 hours.

Bake, covered, in a preheated 400° oven for 40 to 45 minutes or until apples are tender. Garnish with an orange slice and parsley sprig if desired.
