Turkey-Mandarin Orange Salad

Ingredients

1 teaspoon lemon juice fresh
1 apple Red Delicious, unpared, cored, and diced
4 cups turkeys cubed cooked
1 cup celery sliced
1/3 cup green onion finely sliced
1/2 teaspoon salt
Freshly ground pepper to taste
3/4 cup mayonnaise real
6 tablespoons whipped cream whipped
2 tablespoons coconut grated
1 teaspoon orange rind grated
2 teaspoons curry powder (optional)
1 (16-ounce) can mandarin orange segment segments, chilled and drained
1/2 cup cashew nuts salted
Crisp iceberg lettuce leaves

Directions:

Sprinkle lemon juice on diced apple. In large bowl toss together apple, turkey, celery, onions, salt, and pepper until well mixed. In small bowl blend mayonnaise, whipped cream, coconut, orange rind, and optional curry powder. Blend into turkey mixture and chill. Just before serving blend in Mandarin oranges and 1/4 cup cashews. Place salad on lettuce leaves to serve. Chop the remaining cashews and use as a garnish.
