Crisp Spinach Salad

Ingredients

8 slices bacon cut into 1-inch pieces
1/2 pound spinach fresh, stemmed and torn into bite-size pieces
4 eggs hard-cooked, chopped
3 green onions sliced, including some tops
1/2 cup Swiss cheese shredded natural
1/2 cup garlic crouton (optional)
1/2 cup mayonnaise real
3 tablespoons plain yogurt
3 tablespoons lemon juice fresh
1 1/2 teaspoons Dijon style mustard
1/4 teaspoon nutmeg ground
Salt and freshly ground pepper to taste

Directions:

Fry bacon until crisp drain and reserve fat. Keep prepared spinach at room temperature. In large bowl combine bacon, spinach, eggs, onion, Swiss cheese, and optional croutons. Blend mayonnaise, yogurt, lemon juice, mustard, nutmeg, salt, and pepper. Drizzle spinach mixture with 3 tablespoons reserved bacon fat add mayonnaise mixture and toss to coat.
