Tuna Rice Skillet

Ingredients

1 cup onion chopped
1/2 green bell pepper, diced
2 tablespoons butter
1 1/3 cups long grain rice uncooked
1 (16-ounce) can tomato sauce
2 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon marjoram dried
2 (6 1/2-ounce) cans tuna water-packed, chunk-style, drained
1 cup Cheddar cheese, coarsely shredded
1 (2 1/2-ounce) can olives sliced, ripe (optional)

Directions:

In large skillet cook onion and green pepper in butter (or margarine) until soft. Add rice stir. Add tomato sauce, water, salt, and marjoram. Bring to boil, cover and turn heat to low. Cook 30 minutes or until rice is tender. Remove cover. Fold in drained and flaked tuna. Sprinkle cheese over top, then sliced olives. Cover heat gently until cheese is melted.
