Tomatoes Vinaigrette

Serves: 4

   1/4 cup cider vinegar
   2 tablespoons vegetable oil
   1 tablespoon green onions sliced
   1 tablespoon capers (optional)
   1/2 teaspoon italian seasoning dried crushed
   1/4 teaspoon sugar
   1/4 teaspoon salt
   1/8 teaspoon black pepper
   3 to 4 tomatoes small, sliced (about 2 cups)
   Bibb or Boston lettuce leaves


In a medium bowl, mix vinegar, oil, green onion, capers, herb seasoning, sugar, salt and pepper until well blended.

Add tomatoes and stir gently until well coated. Refrigerate for 10 to 15 minutes. Turn tomatoes in the marinade; refrigerate 10 to 15 minutes longer.

Line a serving plate with lettuce and top with tomatoes. Serve remaining dressing separately or refrigerate in a tightly covered container for another use.
