Sunshine Crepes |

1/3 cup margarine
1/2 cup orange marmalade
2 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon lemon juice fresh
1 teaspoon lemon peels finely grated
3 bananas sliced
1 cup sour cream
16 to 20 crepes
Ground nutmeg to taste

Heat margarine and marmalade, stirring constantly, until marmalade melts. Mix sugar and cornstarch; slowly stir into marmalade mixture. Cook over medium heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat; stir in lemon juice and rind. Fold in bananas. Fill center of crepes with sour cream; roll and top with marmalade mixture. Sprinkle lightly with nutmeg.
