Ingredients

3/4 cup carrot shredded
1/2 cup onion chopped
3 tablespoons butter or margarine
4 zucchini small
1 1/2 cups seasoned stuffing mix or croutons
1 (10 1/2-ounce) can cream of chicken soup condensed
1/2 cup sour cream

Directions:

* Cooking Time: 14 to 17 minutes Power: 100% (700 watts) 50% (350 watts) Standing Time: 5 minutes In a 3-quart microwavable dish, place carrots, onion and butter. Microwave, uncovered, at 100% power (700 watts) for 2 minutes. Stir.

Meanwhile, cut zucchini in half lengthwise, then cut into 1/2 -inch slices (you will need about 3 cups). Stir zucchini and stuffing mix into carrot mixture.

In a small bowl, stir soup and sour cream until blended. Stir into vegetables. Spread mixture towards outer edge of dish, leaving a large indentation in center. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 50% power (350 watts) for 12 to 15 minutes or until zucchini is tender, stirring after 10 minutes. Let stand for 5 minutes before serving.
