Ingredients

2 pounds bacon sirloin tip, sliced thin
piece ground suet
4 to 5 stalks celery sliced diagonally, approximately 1/4" wide
1 bunch green onion cut in 2" pieces
1 cup yam noodle, optional (can be found in specialty stores)
1 can bamboo shoots sliced
Cooking liquid:
1/4 cup soy sauce
2 tablespoons sugar
1/2 teaspoon monosodium glutamate
1 cup water
1/2 cup sake

Directions:

Add any other vegetables to your liking: fresh spinach, Chinese cabbage, snow peas, soy bean curd, etc.

Sukiyaki is served at the table. Arrange vegetables and meat attractively on a large platter. Set an electric skillet in the center of the table at 300° F. Melt pieces of suet in skillet. Place 1/3 portion of the meat, 1/3 portion of all the vegetables and 1/3 portion of the cooking liquid in skillet. Turn ingredients gently while cooking. Guests help themselves to individual dishes as the food gets done. Add remainder of the meat and vegetables as needed and continue cooking until everything is done. Do not overcook as the vegetables should be crisp.
