Prepare shrimp or crab set aside. In medium saucepan, heat 3 tablespoons butter or margarine and add onions, celery, and mushrooms sauté, stirring until limp. Add flour and stir for 3 minutes. Stir in salt, hot pepper sauce, and half-and-half simmer, stirring, until thickened. Add tomatoes and continue to cook for 5 minutes. Beat egg yolk and add some of the hot mixture return to saucepan and cook for 3 minutes, stirring. Stir in shrimp or crab. Fill each of the 8 crepes with about 3 tablespoons filling. Place seam side down in well-greased 7 x 11-inch baking dish. Top each with a sliver of butter and sprinkle with Parmesan cheese. Bake in preheated 375° F oven for 10 minutes or until hot and bubbly.
