S'more Mint Squares

Directions:

* "Be sure to use a rubber scraper to clean out the measuring cup used for the corn syrup." 1. Lightly coat the inside of an 8 x 8 x 2-inch microwavable baking dish with softened butter or margarine. Set aside until later. 2. Place in a large microwavable bowl, 1 cup mint chocolate chips, 1/3 cup light corn syrup and 1 tablespoon butter or margarine. Cover bowl with plastic wrap, folding one corner of wrap back so steam can escape while cooking. 3. Microwave at 100% power (700 watts) for 2 to 2 1/2 minutes or until chocolate is melted and mixture is bubbly. The chips may be melted even though they don't look it, so stir to see if they are melted. Remove bowl from microwave oven.

4. Take off plastic wrap. Stir mixture until blended.

5. Stir in 3 1/2 cups honey graham cereal.

Stir until chocolate covers all the cereal.

6. Stir in 2 cups miniature marshmallows.

Spoon mixture into baking dish. Use the back of a spoon to press mixture into an even layer.

7. Microwave, uncovered, at 100% power for 30 seconds. Turn one-fourth turn. Microwave at 100% power 30 seconds longer or until marshmallows are softened. Remove from microwave oven.

8. Wait for 30 to 45 minutes or until firm enough to cut. Cut into squares.
