Red Snapper with Pasta

Ingredients

8 ounces wagon wheel pasta (rotelle)
3 tablespoons vegetable oil
1 green bell pepper
1 onion thinly sliced
1 clove garlic minced
3 cups tomatoes peeled, seeded, and chopped
1/4 teaspoon black pepper
1 pound red snapper fillets, fillets
1 teaspoon lemon juice
2 tablespoons butter

Directions:

Cook rotelle pasta (or substitute with other pasta) according to package instructions. Drain and keep warm while preparing fish sauce. In heavy saucepan, heat oil add green pepper, onion, and garlic. Cook and stir until vegetables are limp. Add tomatoes (may substitute canned tomatoes for fresh) and a robust amount of pepper. Cook 10 minutes. Add fish and lemon juice cook just until fish is tender and flaky, 5 minutes or less. Toss cooked pasta with butter (or margarine) and arrange on large warm platter. Top with fish sauce.
