1 1/2 cups macaroni
1 teaspoon vegetable oil
4 tablespoons butter real
3 tablespoons flour
2 cups milk
8 ounces american cheese sharp processed, cubed
Salt and freshly ground pepper to taste
1/4 cup crackers crumbs, saltine
Heat oven to 400° F. Cook macaroni in lightly-salted boiling water until nearly tender. Drain, mix with vegetable oil, and set aside. In a medium saucepan melt 3 tablespoons butter; add flour and stir 3 minutes. Add milk and cook mixture over medium heat until smooth and thick. Remove from heat; add cheese and blend until all cheese has melted. Season with salt and pepper. Pour sauce over macaroni and mix until just barely coated. Pour mixture into greased 1 1/2 -quart casserole. Sprinkle with cracker crumbs and dot with remaining 1 tablespoon butter. Bake for 30 minutes or until top is golden and macaroni is piping hot.
