Peach Delight

Ingredients

1/3 cup butter or margarine
1 1/2 cups granola cereal
1/2 cup brown sugar packed
1/4 cup flour
1/2 teaspoon cinnamon ground
3 to 4 peaches medium
1 tablespoon sugar
2 tablespoons pecans chopped
Rich Custard Ice Cream or whipped topping (optional)

Directions:

* Cooking Time: 8 to 9 minutes Power: 100% (700 watts) Standing Time: At least 15 minutes Place butter in a medium microwavable bowl. Microwave, uncovered, at 100% power (700 watts) for 45 to 60 seconds or until melted. Stir in granola, brown sugar, flour and cinnamon. Press half of the mixture in bottom of a 9-inch microwavable pie plate.

Peel and slice peaches (you will need about 2 cups).* Arrange peaches evenly in pie plate. Sprinkle with sugar. Top with remaining granola mixture. Sprinkle with nuts. Cover with waxed paper. Place pie plate on an inverted microwavable small plate in microwave oven. Microwave at 100% power for 7 to 8 minutes or until peaches are tender and sauce is bubbly, rotating pie plate one-half turn after 4 minutes.

Uncover and cool. Serve warm or at room temperature with ice cream or whipped topping if desired.
