Orange-Mayonnaise Dressing

Ingredients

3 tablespoons white vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper freshly ground
1/2 cup olives or vegetable oil, or 1/4 cup of each

Directions:

* For a basic fruit dressing, make the basic dressing below using fresh lemon juice in place of vinegar, omitting pepper, and adding 1/4 cup honey and a dash of hot pepper sauce. Blend well. Flavor improves if allowed to stand 1 to 2 hours. Basic French or Vinaigrette Dressing * In a small bowl, mix vinegar, salt, and pepper let stand 1 to 2 minutes to dissolve. Adding oil slowly, stir or whisk until well blended. Vinegar, salt, and pepper can be adjusted according to taste. Shake or stir before serving. Gradually stir basic fruit dressing into 1/4 cup real mayonnaise mixed with 1 tablespoon concentrated orange juice. Blend well.
