Marinated Sliced Tomatoes

6 tomatoes large
1/3 cup vegetable oil
1 tablespoon lemon juice + 1 teaspoon fresh
1/2 teaspoon garlic minced
1/2 teaspoon salt
1/2 teaspoon oregano dried leaves, finely rubbed
2 tablespoons parsley minced fresh


Peel and slice tomatoes in fairly thick slices. Combine and beat together vegetable oil, lemon juice, garlic, salt and oregano. Pour over tomatoes. Refrigerate covered for several hours until well chilled. Sprinkle with parsley just before serving.
