Marinated Artichoke Hearts

Serves: 6

2 (9-ounce) packages frozen artichoke hearts
1/2 cup vegetable oil or 1/4 cup each, vegetable oil and olive oil
1/3 cup red wine vinegar
2 tablespoons parsley chopped fresh
1 clove garlic minced
3 or 4 drops hot sauce
Lettuce, washed, dried, chilled


Cook artichoke hearts according to package directions. Drain well. Mix oil, wine vinegar, parsley, garlic and pepper sauce and pour over hot artichoke hearts. Toss carefully. Cool and refrigerate overnight, spooning marinade over once or twice. Serve on shredded lettuce leaves.
