Honey Fruit Brittle

Ingredients

1/2 cup butter or margarine
2/3 cup brown sugar
1/3 cup honey
1 1/2 cups oats old-fashioned, uncooked
1/2 cup coconut flaked or shredded
1/2 cup almonds chopped
1/2 cup wheat germ toasted
1 cup finely chopped mixed dried fruits (apricots, raisins, peaches, apples, bananas)

Directions:

Melt butter or margarine in large saucepan over low heat. Stir in sugar and honey beat until smooth. Remove from heat stir in oats, coconut, almonds, wheat germ, and dried fruit. Stir until dry ingredients are well coated. Spread mixture evenly into ungreased 9 x 13-inch pan. Bake in a preheated 350° oven for 15 to 20 minutes, stirring occasionally, until lightly browned and bubbly. Remove from oven. Press mixture into a thin layer on a 12 x 15-inch jelly roll pan. Chill until firm. Break into pieces. Store in refrigerator in covered container.

Note: To thoroughly blend, it is necessary to cook brittle in the 9 x 13-inch pan and then transfer to the 12 x 15-inch jelly roll pan for proper thickness.
