Honey-Nut Diamonds

   ___ cup margarine safflower
   ___ cup brown sugar
   _ egg
   ___ cup honey
   ___ cup orange juice concentrate
   _ cups unbleached flour
   ___ cup wheat germ
   _ teaspoon baking powder
   _ teaspoon orange rinds grated
   ___ teaspoon baking soda
   ___ teaspoon salt
   ___ cup buttermilk
   ___ cup raisins
   _ cup shelled sunflower seeds toasted


Heat oven to 350° F. In the large bowl of an electric mixer cream margarine, brown sugar, and egg until light and fluffy. Add honey and juice; mix well. Combine flour, wheat germ, baking powder, orange rind, baking soda, and salt. Add to creamed mixture alternately with buttermilk. Stir in raisins and sunflower seed. Spread batter in a large, well-greased jelly roll pan. Bake 15 to 20 minutes or until golden brown. Cut into diamond shapes.

Note: Will keep frozen up to 3 months. These bars are approximately 65 calories each.
