Honey-Nut Diamonds

Ingredients

1/2 cup margarine safflower
1/3 cup brown sugar
1 egg
1/3 cup honey
1/4 cup orange juice concentrate
2 cups unbleached flour
1/3 cup wheat germ
1 teaspoon baking powder
1 teaspoon orange rind grated
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup raisins
1 cup shelled sunflower seed toasted

Directions:

Heat oven to 350° F. In the large bowl of an electric mixer cream margarine, brown sugar, and egg until light and fluffy. Add honey and juice mix well. Combine flour, wheat germ, baking powder, orange rind, baking soda, and salt. Add to creamed mixture alternately with buttermilk. Stir in raisins and sunflower seed. Spread batter in a large, well-greased jelly roll pan. Bake 15 to 20 minutes or until golden brown. Cut into diamond shapes.

Note: Will keep frozen up to 3 months. These bars are approximately 65 calories each.
