Guacamole-Pineapple Salad

3 avocados ripe
3 tablespoons lemon juice fresh or lime juice, or to taste
1/2 teaspoon salt or to taste
1/2 teaspoon coriander ground
2 green chilies canned, rinsed, seeded and chopped
1 tomato medium, finely chopped
Tabasco® pepper sauce to taste (optional)
Canned sliced pineapple
Lettuce, washed, dried, chilled


Cut avocados in half, remove seeds and scoop out pulp with a spoon or if skin is thin, peel the avocados. Mash pulp coarsely with a fork while blending in lemon or lime juice. Add salt and coriander. Add chopped chilies, tomato and optional pepper sauce. Place a round of sliced pineapple on a couple of lettuce leaves for each serving. Top with about 1/3 cup of the avocado mixture. Sprinkle with a bit of paprika.
