Gelatin-Melon Dessert

Ingredients

1 cantaloupe or honeydew melon
1 1/2 cups water
1 (3-ounce) package lime jello
1 1/2 teaspoons lemon juice fresh
1/2 cup crushed pineapple unsweetened, undrained
1/2 cup mandarin orange segment drained

Directions:

Pare cantaloupe or honeydew taking care to keep whole. Slice a small cap off top carefully scoop out seeds. Trim a thin straight piece from bottom to make platform place upright in a small bowl. Refrigerate until ready to fill. Bring 1/2 cup water to boil remove from heat and stir in gelatin and lemon juice until gelatin is completely dissolved. Stir in remaining water and refrigerate until syrupy. Add pineapple and Mandarin oranges. Spoon mixture into melon. Refrigerate overnight or until gelatin is set.

To serve, cut melon into 6 lengthwise wedges.
