Frosty Strawberry Pie

Ingredients

2 frozen pie crusts 9-inch, baked
2 eggs white
2/3 cup sugar or to taste
1 teaspoon vanilla extract
2 pints strawberries fresh, washed, hulled, and sliced
1 tablespoon lemon juice fresh
1 cup cream whipped

Directions:

Cool pie crusts. Into a large bowl, combine egg whites, sugar, vanilla, strawberries, and lemon juice beat for 15 minutes. Fold in whipped cream and pour into pie shells. Freeze 2 to 4 hours or overnight. No need to defrost pie before serving.

Note: The strawberry mixture may be frozen in non-metal bowls then spooned over slices of angel food cake if a pie is not desired.
