Fluffy Icing

Ingredients

1 cup sugar
1/3 cup water
1/8 teaspoon cream of tartar
2 eggs white large, room temperature
dash salt
1 teaspoon vanilla extract
Liquid food color (optional)

Directions:

1. Mix sugar, water, and cream of tartar in a 2 cup glass measuring cup. Microwave, uncovered, at 50% power (350 watts) 4 minutes. Stir until sugar is dissolved. Microwave, uncovered, at 50% power (350 watts) 3 to 4 minutes longer, stirring after 2 minutes, until mixture is syrupy and a small amount forms a very soft ball when spooned into a small bowl of ice water.

2. Beat egg whites and salt in a small bowl with electric mixer until soft peaks form when beaters are lifted. While mixer is running at high speed, gradually pour in hot syrup. Beat 3 to 4 minutes longer until thick and fluffy and stiff peaks form when beaters are lifted. Beat in vanilla and food color.
