Double Grain Bread

Ingredients

2 3/4 cups water boiling
1 cup bran flake unprocessed
1 cup oats old fashioned
1/3 cup safflower oil
2 teaspoons salt
1 cup golden raisins
2 packages yeast active dry
1/2 cup water lukewarm
1/4 cup honey
1 1/2 cups wheat germ
3 cups whole wheat flour
2 1/2 cups unbleached flour

Directions:

Combine boiling water, bran flakes, oats, oil, salt, and raisins in a large bowl. Stir well and let cool to lukewarm. Dissolve yeast in 1/2 cup lukewarm water add to cooled mixture. Stir in honey, wheat germ, and whole wheat flour. Add unbleached flour, 1/2 cup at a time, mixing until dough leaves sides of bowl, but is still slightly sticky. Turn out onto a lightly-floured surface and knead until smooth and elastic. Place dough in a large greased bowl turn to grease all sides. Cover with a clean towel and set in a warm place to rise until double in bulk. Punch dough down and let rest 5 minutes. Divide and shape into 3 loaves place in 3 greased 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pans. Cover let rise until doubled. Bake in a preheated 350° F oven for 50 to 55 minutes or until tests done.

* Doughs containing raisins are not suitable for kneading by dough hook.
