Applesauce-Oatmeal Bread

Ingredients

2 cups unbleached flour
1 tablespoon baking powder
3/4 teaspoon salt
1 teaspoon cinnamon ground
1/3 cup dry milk powder
1/2 cup oats old fashioned
1/3 cup safflower oil
1/3 cup brown sugar
1 cup applesauce unsweetened
3 eggs white
2/3 cup raisins golden

Directions:

Heat oven to 350° F. Combine flour, baking powder, salt, cinnamon, and dry milk. Add oats and mix well. In a large bowl cream oil and brown sugar. Add applesauce and egg whites beat. Stir in flour mixture until well-blended. Stir in raisins. Pour into a well-greased 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan and bake 45 to 50 minutes or until done. Cool thoroughly before slicing.
