3 cups sugar
3/4 cup water
3/4 cup light corn syrup
1/8 teaspoon salt
3 eggs white
1 teaspoon vanilla extract
1 1/4 cups walnuts


Combine sugar, water and corn syrup in heavy saucepan. Place over medium heat stir until thoroughly mixed. Continue cooking to hard crack stage (300°) or until small amount of mixture dripped into very cold water (not ice water) separates into threads which are hard and brittle. Meanwhile, beat egg whites with salt in an electric mixer until foamy. When syrup reaches hard crack stage, pour syrup into egg whites very slowly in a fine stream while mixer is running at high speed. After all the syrup has been poured into egg whites, reduce speed to prevent motor from overheating. While beating candy, use a rubber spatula around edge and bottom of bowl to prevent syrup from sticking to the bowl. Add vanilla continue to beat until candy is semi-glossy. (This takes about 7 to 8 minutes.) Quickly add nuts turn into a 7 x 11-inch buttered pan. Spread out and when cool, cut into squares.
