1 cup white rice long grain white
1 cup celery sliced
1 tablespoon butter or margarine
1 cup apples diced Red Delicious
1/2 cup green onions sliced
1 10 1/2-ounce can cream of celery soup condensed
1/2 cup milk
1/4 cup raisins
2 to 3 teaspoons curry powder
2 7-ounce cans tuna water-packed solid white, drained
Almonds sliced, toasted if desired
Cook rice according to package directions; keep warm if necessary.
In a 3-quart saucepan over medium-high heat, sauté celery in butter or margarine for 10 minutes or until beginning to soften. Add apple and green onions and sauté for 2 minutes.
Stir in soup, milk, raisins and curry powder. Bring to a boil. Stir in tuna, breaking up large chunks. Heat through.
Serve over rice; sprinkle with almonds.
