Crab Florentine Sandwiches

Ingredients

1 (10-ounce) package spinach chopped
1 (6 1/2-ounce) can crab meat white, drained
4 ounces Swiss cheese shredded (about 1 cup)
1/4 cup mayonnaise
1/4 teaspoon black pepper
3 English muffins sourdough, cut in half

Directions:

Preheat oven to 425°.

Cook spinach according to package directions drain well (MW). Measure 1/2 cup reserve remaining spinach for another use.

In a medium bowl, mix crab meat, cheese, 1/2 cup spinach, mayonnaise and pepper until blended.

Lightly toast English muffins if desired. Spread 1/3 cup of the crab mixture on each English muffin half. Place halves on a baking sheet.

Bake for 8 to 9 minutes or until cheese is melted and edges begin to brown. Serve immediately.

Serve with melon wedges and strawberries.
