Coconut Cream Pie |

2/3 cup sugar
3 tablespoons cornstarch
1 tablespoon flour
1/4 teaspoon salt
2 cups milk
3 eggs yolk lightly beaten
1 cup coconut flaked
2 tablespoons butter or margarine
1 teaspoon vanilla extract
Frozen pie crust 9-inch baked

Combine sugar, cornstarch, flour and salt in a saucepan. Gradually add milk; blend well. Stirring constantly over medium heat, bring to a boil and boil for 2 minutes. Remove from heat. Blend a small amount of hot mixture into egg yolks; then add to hot mixture in saucepan. Cook for 1 minute, stirring constantly. Add coconut, butter or margarine and vanilla; blend well. Cover and cool to lukewarm, stirring occasionally. Pour into pie shell. Top with Meringue (below) or whipped cream.
