Cheesy Potato Snacks


Serves: 30

Ingredients

1 cup instant potato flakes
1/4 cup flour
1 ounce sharp cheddar cheese shredded ( 1/4 cup)
2 tablespoons green onions chopped
1 tablespoon Parmesan cheese grated
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon baking powder
dash red bell pepper ground
1/2 cup water
1 tablespoon margarine
1 egg large, beaten

Directions:

In a small bowl, mix potato flakes, flour, Cheddar cheese, green onion, Parmesan, paprika, salt, baking powder and red pepper.

In a small saucepan, bring water and margarine to a boil. Pour over potato mixture. Add egg and mix well. Shape mixture into three 3/4 -inch diameter logs. Wrap in waxed paper and freeze until firm or wrap in foil and freeze up to 2 weeks.

Preheat oven to 350°. Coat baking sheets with non-stick cooking spray. With a sharp knife, slice frozen logs 1/8 inch thick. Without touching each other, place slices on baking sheets. Bake for 20 minutes or until golden brown around the edges.* Cool on wire racks. Store in an airtight container.

* Watch snacks carefully during baking they scorch easily.
