Apricot Curry Dip

Ingredients

1 (17-ounce) can apricot half drained
1 (8-ounce) container lemon lowfat yogurt
3/4 teaspoon curry powder
1 1/2 teaspoons cornstarch
Apple slices

Directions:

Place apricots, yogurt and curry powder in a blender container. Cover and blend at low speed for 10 to 15 seconds or until apricots are puréed.

In a small saucepan, mix cornstarch with 1 cup of the apricot mixture. Stirring over medium heat, bring to a boil and boil for 1 minute. Stir in remaining apricot mixture. Cover and refrigerate for 1 hour or until chilled.

Stir dip well transfer to a serving bowl and serve with apple slices for dipping.
