Beef And Onion Sandwiches

Ingredients

2 onions medium, thinly sliced
1/2 teaspoon salt
1/2 teaspoon sugar
2 tablespoons butter or margarine
4 slices rye bread light rye bread or wheat berry bread
Prepared mustard to taste
mayonnaise Real to taste
4 to 6 roast beef thin cooked
Salt and freshly ground pepper to taste

Directions:

In hot dry skillet, stir-fry onions with salt and sugar over medium heat until onions separate into rings and just begin to brown. Add 1 tablespoon butter or margarine and cook until tender, about 3 minutes. Spread bread lightly with remaining 1 tablespoon butter, mustard, and mayonnaise. Place beef on 2 slices of bread, season with salt and pepper to taste, then layer on onions and cover with remaining slices of bread. Can serve cold or wrap in foil and heat in oven.

Note: If you have enough meat, increase amount of beef, prepare sandwiches on single slices of bread, and serve open-face style on a plate.
