Banana Pancakes |

2 1/4 cups flour
4 teaspoons baking powder
2 tablespoons sugar
3/4 teaspoon salt
3 eggs well beaten
2 cups milk
4 tablespoons butter or margarine, melted
3 bananas large or 4 small very ripe, mashed

Sift together dry ingredients. In small bowl, combine eggs, milk, melted butter or margarine and add to dry ingredients. Stir until moistened. Add mashed bananas and stir. Bake on hot griddle or heavy fry pan with generous amount of butter or margarine. This will take about twice as long as a regular pancake to cook. Remove to warming plate. Serve with melted butter or margarine and sugar.
