2 eggs
1 cup sugar
1 cup vegetable shortening
1/2 cup butter or margarine, at room temperature (1 stick)
1 1/2 teaspoons almond extract
1 teaspoon vanilla extract
1/2 teaspoon salt
3 1/2 cups flour
Additional vegetable shortening
Additional sugar or colored sugar (about 3 tablespoons)
You'll Need:
electric mixer with large bowl
small bowl or custard cup
measuring cups
measuring spoons
metal spatula
rubber scraper
wooden spoon
waxed paper
baking sheets
paper towel


* "Have fun making initials or names for everyone. Press joints of letters together well so they won't break." Have Ready: * 1. Separate 1 egg. Place the yolk in the large mixer bowl and the white in a separate small bowl or custard cup. Set bowl with egg white aside. Break remaining egg into bowl with the egg yolk. 2. Add sugar, shortening, butter or margarine, almond and vanilla extracts and salt to the eggs in the large mixer bowl. On low speed, blend ingredients for about 1 minute. Increase speed to medium and beat until well mixed, stopping the mixer and scraping the bowl several times.

3. Add 2 cups flour. Beat on low speed, scraping the bowl several times. Add the remaining 1 1/2 cups of flour and mix well. The dough will be stiff so you might want to finish mixing with a wooden spoon to blend in all of the flour.

4. Divide the dough in half. Wrap each half in waxed paper and place in the refrigerator for 1 hour to chill (or in the freezer for 30 minutes-remember to set a timer).

5. When the dough has been chilled, turn on the oven to 375°.

6. Lightly grease baking sheets with a paper towel dipped in shortening.

7. Keep half of the dough chilled in the refrigerator while shaping the letters of the alphabet. Remove waxed paper. Pinch off pieces of dough and roll into ropes about the size of a thick pencil. Place ropes on baking sheets and shape letters about 3 inches tall. Pinch joints of letters together to seal. Use more dough as needed. Shape as many letters as you like using remaining dough from the refrigerator.

8. Beat the egg white until bubbly with a wire whisk or fork. With a pastry brush, lightly brush the tops of the cookies with the egg white. Lightly sprinkle with sugar.

9. Bake for 10 to 12 minutes or until lightly browned. Remove baking sheets from the oven and let cool 1 minute. Carefully lift cookies with a pancake turner to a wire rack to cool.

10. Store cookies between sheets of waxed paper in a shallow airtight container.
