Grilled Duck Breasts

Ingredients

8 tablespoons butter
1 tablespoon Worcestershire sauce
1 garlic clove, finely minced
3/4 cup thinly sliced fresh mushrooms
6 duck breasts, removed from bone, skinned
1 Salt, freshly ground black pepper, and cayenne pepper
6 strips bacon

Directions:

Melt butter in a saucepan and add Worcestershire, garlic, and mushrooms; cook until mushrooms become slightly soft. Remove from heat. Light a fire in the barbecue pit and allow coals to get glowing red hot. While you’re waiting, rub duck breasts well with salt, black pepper, and cayenne. Carefully wrap each breast with a strip of bacon, securing it with toothpicks. Let stand at room temperature. (You might want to take this time to fix a green salad with creamy spicy dressing and some wild rice cooked with a handful of chopped roasted pecans.)

When coals are ready, grill breasts quickly, 3–4 minutes on each side if you like them juicy and with a little red in the meat; longer if you prefer you meat well done. Baste with butter sauce. To serve, place breasts on toasted slices of bread, and pour remaining butter and mushroom sauce over each breast.

Fun Fact: Established in 1821, the Academy of the Sacred Heart in Grand Coteau, Louisiana, is the second oldest institution of learning west of the Mississippi. It is the oldest, continually running member of the Network of Sacred Heart Schools in the world. It is also the oldest independent school in the Acadiana region. In its gracious oak alley setting, the all-girls Academy has remained in continuous operation through fire, epidemics, and war.

Although thousands of Federal troops were encamped in the fields surrounding the Academy during the Civil War, the school was not touched. Union General Nathaniel Banks had a daughter in a school in New York run by the Religious of the Sacred Heart, and he was asked to look after the Grand Coteau sisters and their students.

On campus is a small chapel honoring St. John Berchmans, a Jesuit who appeared to a novice, Mary Wilson, in an apparition and cured her of a fatal illness in 1866. This miracle eventually led to the canonization of John Berchmans. It is the only shrine at the exact location of a confirmed miracle in the United States.
