Fried Shrimp


Serves: 5

Ingredients

1 cup all-purpose flour
1/2 teaspoon sugar
1/2 teaspoon salt
1 cup ice water (leave 1 or 2 cubes in)
1 egg, slightly beaten
2 tablespoons oil
2 pounds fresh, frozen shrimp, peeled, leave tails intact

Directions:

Combine ingredients, except shrimp; stir until smooth, then set in refrigerator or freezer to chill.

Butterfly shrimp by cutting lengthwise to tail. Dry shrimp, dip into batter, and fry in deep hot fat (350–400°) till floating and golden brown, 3–5 minutes. Serve immediately.

Note: Also good for frying soft- and hard-shelled crabs, eggplants, onions, etc.
