Crabmeat au Gratin

1/2 cup finely chopped celery
1 cup chopped onion
1 stick butter
1/2 cup flour
1 (14-ounce) can evaporated milk
2 egg yolk
1 teaspoon salt
1/4 teaspoon red pepper
Black pepper to taste
8 ounces grated Cheddar cheese
1 pound lump crab meat


Sauté celery and onion in butter until soft. Add flour to this mixture. Add milk gradually, stirring constantly. Add egg yolks, salt, red and black pepper. Cook for 10 minutes. Put crabmeat in a bowl and pour sauce over the crabmeat. Blend well and place in a lightly greased casserole and sprinkle with grated cheese. Bake at 375°, until browned, approximately 15 minutes.
