Pizza-Chicken Roll-Ups

Ingredients

4 boneless, skinless chicken breasts
12 slices pepperoni
8 slices mozzarella cheese, divided
1 (15-ounce) can pizza sauce
garnish: fresh parsley, minced

Directions:

Flatten chicken to 1/4-inch thick. Place 3 slices of pepperoni and one slice of cheese on each chicken breast. Roll up tightly secure with toothpicks. Place in a greased 11" x 7" baking dish. Spoon pizza sauce over roll-ups. Bake, covered, at 350 degrees for 35 to 40 minutes. Uncover and top with remaining cheese. Bake an additional 5 to 10 minutes or until cheese is melted. Sprinkle with parsley. Slice each chicken breast in quarters before serving.
