Tomato Beef Chow Mein

Ingredients

20 small packages pan fried noodles
5 pounds beef sliced thin against grain
1/3 cup plus 1 tablespon soy sauce
1/3 cup plus 1 tablespoon cornstarch
1/3 cup plus 1 tablespoon sugar
15 onions wedged
15 green peppers wedged
20 large tomatoes wedged
1/2 to 1 cup olive oil
SAUCE
1 1/4 gallons water
1 1/4 cups cornstarch
5 cups ketchup
2 to 4 tablespoons salt
2 1/2 cups sugar

Directions:

Boil noodles in water for 2 minutes, rinse and set aside. Slice beef thin across the grain. Combine beef with soy sauce, cornstarch and sugar in a large bowl. Combine sauce ingredients. Heat oil and fry the noodles until lightly brown in several 14” Dutch ovens or a 20” Dutch oven lid, only turning once, remove noodles and set aside. If using a 20” lid remove from heat after turning noodles and turned side is light brown. Leave noodles on the lid. Heat the 20” Dutch oven over high heat, add oil and fry the beef until done, remove and set aside. Add onions and peppers, stir fry a few seconds to break onion apart. Add sauce mixture, stir until thickened. Add tomato and beef, stir gently to combine. Pour over the noodles in the lid and fluff gently with a fork to combine, or leave the “noodle plate” under the noodles and serve.
