Mountain Man Breakfast

Ingredients

10 pounds shredded left over baked potatoes
1 pound bacon diced
1 pound breakfast sausage
2 medium onions
2 green bell peppers
1 pound shredded multi-cheese shredded cheese (2 bags)
30 eggs slightly beaten (1 flat)

Directions:

In a 16” Dutch oven, brown the bacon pieces then add the sausage and brown off the sausage. Drain off half the grease. Add the onions and peppers and cook 3 minutes until just softened. Add in the potatoes and stir until the meat and vegetables are blended in . stir in the cheese leaving just a little to sprinkle on top. gently stir in the eggs and cover. place 1 ring on top and cook 35 to 45 minutes until the eggs are set. Sprinkle with the remaining cheese and cover. let rest 5 minutes to melt the cheese.
