Country Sausage Gravy

Ingredients

2 pounds breakfast sausages
1 1/2 pounds bacon diced
1 large yellow onion diced
1 1/2 teaspoons kosher salt
3/4 teaspoon fresh ground black pepper
1/2 teaspoon red pepper flake
1 teaspoon granulated garlic
1 pound butter
1 1/2 cups all purpose flour
3 gallons whole milk warmed

Directions:

Brown sausage, bacon, and onion in a 15” Dutch oven. Do not drain the grease from the meat, as it seasons the gravy. Add flour and seasonings to the meat mixture, stir well and cook 5 to 7 minutes. Pour warmed milk slowly into mixture, stir well and bring to a heavy simmer but, not boiling. Add a little more flour for a thicker gravy to the meat mixture, if desired. Serve over biscuits, potatoes, etc. Serves 75 8 oz. servings or 90 6 oz servings.
