Key Lime/Lemon Meringue Pie

1/4 cup egg yolk (save whites for meringue)
1 1/3 cups Borden Eagle Brand Sweetened Condensed Milk
1/2 cup lime juice (for key lime) lemon juice (for lemon meringue)
1/4 teaspoon green food coloring (optional for key lime)
1/3 cup egg white
1/4 teaspoon cream of tartar
1/3 cup sugar


Preheat 12” Dutch oven to 400°F. In a large bowl combine egg yolks, juice, and milk. Add food coloring if desired.

Pour filling into a 9” pie shell. Set aside. In a mixer bowl beat egg whites and cream of tartar until foamy; gradually add sugar, beating until stiff but not dry.

Spread meringue over pie sealing carefully to the edge of the pie. Bake 5 to 8 minutes until meringue is golden brown. Cool, chill 3 to 4 hours until set. Serve
